Black Bean Chili


I got my mom this book for Mothers Day. The recipes all look REALLY good. Only problem is she only cooks for herself and then it's just Matt and I that eat whatever I cook. (sometimes Baby Joe) And almost all the recipes make so many servings. So my mom and I decided to get together and make the recipes and split them and freeze the left overs. Today we made Black Bean Chili. And it was ooooooh soooooo gooooood!!!! The recipe is pretty detailed if you REALLY want it then I can email it to you, but I will tell you a few of the ingredients. I for one would have never thought to put all these together!!

Black Beans (duh)
onion
green bell pepper
garlic
honey
cinnamon
oregano
pepper
salt
olive oil
cumen
tomato
orange zest
orange juice
wheat
Greek yogurt
cilantro
lime wedges

That's just what I remember off the top of my head! And it was so filling!! Matt ate it as a bean dip and ate it with tortilla chips. It could have been a bit spicier, but we elected to not put the chipotle in. Next time, it may need some thing to kick it up a notch! But I am excited that we are doing this together. Best part is, I can even mess around with the recipes so Tyla can have them too. And they are SO good for you!
